The Turnip: Sweet, Buttery, Earthy
This summer was the first time I had ever tried cooking white turnips, thanks to our CSA farm box, and it has quickly become one of my favorite vegetables! It appears to be such a simple root and yet it can take on such an amazing texture and taste when quickly tossed in a pan with just a few ingredients. This is a vegetable that should not be underestimated! Continue reading
The Perfect Weeknight Meal
Last year, when I did the Portland to Coast relay, this soup was a major hit! After the 24-hour relay race, all 12 of us put up our feet and caught our breath at the beach-front house we rented. For dinner that night, I had a double batch of this delicious African Nut Soup premade; it was a perfect and no-stress way to celebrate our exhausting and fun experience together. Cheesy, Comforting, and Delicious
Before I went vegan, my absolute favorite pasta sauce was vodka sauce. It was rich, cheesy, comforting and delicious! I decided to create a vegan version of that the other night. I was soooo happy with the result! I tasted exactly like the vodka sauce of days past. It whips up super fast (think, minutes!), making it an easy go-to for hectic weeknights. Continue reading
Pizza For Days!!
We are on a pizza kick here at our house. I guess that’s what happens when you make a large batch of homemade pizza dough and there are only two of you! I’m not complaining though, I love pizza. Tonight we went for an Asian-inspired pizza. Oh. My. Gosh. It was sooooo good!! Topping it with my homemade peanut sauce and cilantro really hit it out of the park. Continue reading
