Asian Pizza with Peanut Sauce and Cilantro (Vegan)

Pizza For Days!!

We are on a pizza kick here at our house.  I guess that’s what happens when you make a large batch of homemade pizza dough and there are only two of you!  I’m not complaining though, I love pizza.  Tonight we went for an Asian-inspired pizza.  Oh. My. Gosh.  It was sooooo good!!  Topping it with my homemade peanut sauce and cilantro really hit it out of the park. Continue reading

A Reflection of Today’s Yoga Class

The First Step on the Path of My New Yoga Journey

Today was my first studio yoga class!  The last time I took a teacher-directed yoga class was at the Michael Franti Soulshine Yoga Tour in the June 2014, which was amazing!!!   My only practice since then has been at home, either to videos or following my own whim.  I have been seriously considering making yoga a greater part of my life over the past year, and decided that now was a good time to open up and create that space for it.   Continue reading

Rustic Vegan Pizza with Kale, Leeks and Pears

Pizza, How I Love You So

You know how everybody has that one meal that they say they could eat for the rest of their life?  Well, for me it’s pizza!!  There are just so many different things you can do with it, with endless possibilities.  When I went vegan that was the one thing that just broke my heart; I honestly thought that I wouldn’t ever be able to create a mouthwatering pizza without the fresh buffalo mozzarella and parmagiano regiano on it.  Boy, was I wrong!!   Continue reading

Homemade Pizza Dough

The feeling I get from making a pizza from scratch is pretty irreplaceable.  Even though it’s a fairly easy process, it can sometimes seem daunting, for whatever reason.  However, when I take the time to make my own dough, I feel like I’m taking my pizza to the next level, even if it’s just emotional.  Like I’m some badass viking provider, making gourmet pizza in my own tiny kitchen!   Continue reading

Buddha Bowl with Roasted Delicata Squash, Beets, Purple Kale and Tahini Dressing

“It was October again … a glorious October, all red and gold, with mellow mornings when the valleys were filled with delicate mists as if the spirit of autumn had poured them in for the sun to drain — amethyst, pearl, silver, rose, and smoke-blue. The dews were so heavy that the fields glistened like cloth of silver and there were such heaps of rustling leaves in the hollows of many-stemmed woods to run crisply through.” L.M. Montgomery

It’s the middle of October and we’ve just started to get rainy, crisp, Autumn days.  The cozy comfort food that I crave at this time of year is one of the many reasons why the Fall is my favorite season.   Continue reading

Hello, Yoga, my old friend

After having a passionate talk yesterday with my mom and some of her coworkers about how great yoga is, I decided that I’ve been away for too long.  I used to set aside at least 30 minutes every day for yoga, and loved it.  However, after moving out of my parents’ house last winter, that all changed.
