Vegan Cheesy Tomato Pasta Sauce

Cheesy, Comforting, and Delicious

Before I went vegan, my absolute favorite pasta sauce was vodka sauce.  It was rich, cheesy, comforting and delicious!  I decided to create a vegan version of that the other night.  I was soooo happy with the result!  I tasted exactly like the vodka sauce of days past.  It whips up super fast (think, minutes!), making it an easy go-to for hectic weeknights.   Continue reading

Asian Pizza with Peanut Sauce and Cilantro (Vegan)

Pizza For Days!!

We are on a pizza kick here at our house.  I guess that’s what happens when you make a large batch of homemade pizza dough and there are only two of you!  I’m not complaining though, I love pizza.  Tonight we went for an Asian-inspired pizza.  Oh. My. Gosh.  It was sooooo good!!  Topping it with my homemade peanut sauce and cilantro really hit it out of the park. Continue reading

Rustic Vegan Pizza with Kale, Leeks and Pears

Pizza, How I Love You So

Homemade Pizza Dough

Buddha Bowl with Roasted Delicata Squash, Beets, Purple Kale and Tahini Dressing

“It was October again … a glorious October, all red and gold, with mellow mornings when the valleys were filled with delicate mists as if the spirit of autumn had poured them in for the sun to drain — amethyst, pearl, silver, rose, and smoke-blue. The dews were so heavy that the fields glistened like cloth of silver and there were such heaps of rustling leaves in the hollows of many-stemmed woods to run crisply through.” L.M. Montgomery

It’s the middle of October and we’ve just started to get rainy, crisp, Autumn days.  The cozy comfort food that I crave at this time of year is one of the many reasons why the Fall is my favorite season.   Continue reading

Last-Minute Tacos with Peanut Butter Sauce

This afternoon, my boyfriend sent me a text telling me he was coming home for his lunch break…

His lunch break only lasts 30 minutes, and since I was home this afternoon I thought it would be nice to cook him something that would be ready for him to eat when he walked in the door.  Needless to say, I felt a little rushed!   Continue reading
